Raw Beetroot and carrot salad with a walnut dressing
I really enjoy making this quick and easy salad. It has really great colour, flavour and textures and can make any meal exciting, I first tried a similar salad at a really cool verge café in Coff's Harbour that I have to stop at every time I'm passing through the town, and have been making it a lot since. Everyone loves it!
You can use any raw or toasted nut or seed of your choice, I like the creaminess of walnuts for this salad, and it also needs the carrot to boost the sweetness and all over yumminess of the beetroots - they work really well together.
1 medium beetroot grated
2 medium carrots grated or sliced into matchsticks
½ cup walnuts chopped
½ cup chopped herds like mint, parsley basil or a mix of fresh garden herbs
½ cup sultanas chopped
2 tabsp apple cider vinegar
¼ cup olive oil
Salt and pepper to taste
1 Mix the oil, vinegar, salt, pepper, sultanas together in a bowl and let stand for 5 min, so the sweetness of the sultanas comes out and goes through the dressing
2 Add the remaining ingredients into a nice bowl and mix well. Top with more walnuts, now you are ready to serve, or it keeps well in the fridge till needed.
