This is a really quick and tasty little sweet to surprise your friends with or just indulge in yourself. It is sugar, wheat and dairy free and very vegan friendly – so you won't need to feel guilty.
A few months ago I was saying with my good friend Maddie in Foster and her mum pulled out this amazing little cook book for me to read "Eating for Immortality "it was published in the 60's, so it may be hard to find now, but is full of so many amazing little recipes just like this one. If you ever get your hands on a copy - you're set for lots of easy vegetarian recipes.
1 cup Dates, pitted and chopped in half
1 very ripe Banana, peeled
½ cup Walnuts, chopped
½ cup shredded Coconut, raw or toasted
I like to add some spices to the mix like 1 teasp of Cinnamon, Nutmeg, Vanilla and Cardamom powder. Sometimes one or a mix of 2 or 3 spices is good - it makes them a little different every time....
Add Dates, spice and Banana and in a food presser and blend till smooth
mix in the Walnuts keeping them a bit chunky
turn the mix out on to a plate and roll in to small balls, the mix might be a little soft to work with
cover a clan plate with the Coconut and roll the balls around till they are all coved by the Coconut, add more Coconut if needed, now you are ready to serve and eat.
They will get a little firmer in the fridge and keep for up to 3days.
