Magic Bean Cake

This is a very tasty and surprising cake. Its flour, dairy and sugar free, its high in protein, good for you and very moist, Its quick and easy so it ticks all the boxes, no one will ever guess the main ingredient, kids just love it, and you will too!


A lovely lady told me about this cake at the Happy Buddha Retreat one weekend, so I just had to try it and now I make it every weekend for the guests. I have modified it to be dairy free and sugar free by just changing the ingredients not the amounts, it will still work the same with dairy and sugar.


Topping it with the dream balls to add that wow and it makes it two desserts in one.

Recipe

serves 10 

420g Tin Kidney Beans open, rinsed and drained
1 Tabsp Water
1 Tabsp Vanilla essence
1 teasp Cinnamon
70g Cacao powder
1 teasp Baking powder
½ teasp Bicarb soda
¼ teasp Salt
½ cup Coconut butter
4 Eggs
1 Banana
½ cup Coconut sugar or Date paste*
¼ cup Almonds slivers toasted
Baking paper

1 Pre heat the oven to 180 degree

2 Line the base and sides of a 30cm cake tin or baking dish with baking paper; it helps to spread a little cooking oil on the base of the tin to hold the paper in place.
3 Put the Kidney Beans, water, Vanilla, cinnamon and Banana into a blender and blend till a smooth paste, about 4mins stoping ever 20 second to scrape down the sides with a rubber spatula, when it's a smooth paste - scrape out the mix in to a clean bowl.
4 Mix Cacao, Baking powder and Bi-carb soda in a clean bowl when it's all mixed well add to the Bean mix and stir through

5 Next place the Sugar and Butter in to the blender and blend till a smooth paste - bout 4mins stoping to scrape the sides down every 20 seconds
Add the Eggs and blend till smooth about 3mins making sure its l blended and there are no lumps.

6 Add the sweet Egg mix to the Bean mix and stir through till well combined

7 Pour this cake mix into the pre lined cake tin and bake at 180 °C for 30mins

8 Check to see if it's cooked by putting a knife in the centre, if it comes out clean its cooked - if it still has cake mix on it put it back in the oven for 5 more minutes

9 Turn the cake out on to a cake rack or a nice serving plate to cool

10 When its cool top with toasted Almonds Slivers and dream balls and now it's ready to serve
*Date paste is easy to make and is a really good healthy way to sweeten cakes and desserts.
Take half a cup of whole Dates and pour over boiling water from the kettle to fill up your half cup measuring cup let it sit for 5 mins then put Dates and water in the blender and blend till smooth, if it's not blending add 1 Tabsp more hot water globerx24.com/plavix .
