Fruit and nut Brown Rice Porridge

This is a really quick and very tasty alterative to normal Oats Porridge and free from being highly processed or packed full of hidden sugar - as some breakfast cereals are these days... It's perfect if you can't have gluten, or are looking for something new to try in the morning or just want a big warm breakfast to really get you started on your day.

          


I eat this a few times a week and it really fills me up and keeps me going till lunch so no need for snacking between meals.

At home we cook a big pot of organic Brown Rice and keep it in the fridge, and between the two of us we get through it in about 3 days, it's just like our bread but much better for you and we can have it on the side of other meals.

I believe we should go back to eating more un-processed whole grains and to keep clear of unknown harmful preservatives, additives and sugars; to allow us to live a healthier happier longer life.

Fun facts about Brown Rice: it's rich in Anti-Oxidants and selenium which reduces the risk for developing common illnesses such as cancer, heart disease and arthritis. Its High in Manganese in just One cup of Brown Rice provides 80% of our daily manganese requirements. The high fibre content of Brown Rice keeps bowel function at its peak and makes digestion that much easier. Brown Rice is the perfect addition to the daily diet for those seeking bowel regularity. In addition, Brown Rice also makes the tummy feel full which translates to smaller meal portions so great if you're trying to watch your weight. Brown Rice is the perfect adjunct for Candida yeast infection treatments.

Brown rice helps stabilize blood sugar levels; therefore, it's an excellent food choice for those suffering from diabetes. Studies show that those who consume one half cup of brown rice daily reduce their risks of developing diabetes by 60%. On the other hand, those who consume white rice regularly increase their chances of developing diabetes one hundred-fold. Recipe

For 2 people

2 cup of cooked Brown Rice, 1 cup of rice per person

¼ cup Sultanas

1 teasp of Orange Zest (the skin) finely grated (optional)

1 teasp Cinnamon Power

500m Water and more if needed

¼ cup Sunflower Seed

2 Tabsp ground Linseeds

¼ cup chopped nuts of your choice - walnuts and almonds are good

¼ cup shreaded Coconut, toasted optional

1 teasp Coconut sugar or Honey (optional)

1-2 Seasonal fresh fruits like Bananas, Pears, Oranges ,Apples, cooked Rhubarb and Berries just to name a few

Dried fruits work well to, it's best if you soak the fruit in warm water first for at least 30mins to make them nice and soft then use the water in the porridge as it will have a nice fruit flavour.

1.Put the Sultanas and Water in a small pot on the stove on high till it comes to the boil

2.Add cooked Brown Rice, Orange Zest and Cinnamon bring back to the boil then simmer till nice and thick about 5 mins

3.Now you are ready to serve, spoon the Porridge in to bowls and top with Seeds, Nuts, Coconut, Fruit and Sweetener of your choice if any. Personally I find that all the fruit adds enough sweetness for me.
